Caviar - is a delicacy consisting of processed, salted, non-fertilized sturgeon roe.
Traditionally, the designation “caviar” was only used for sturgeon roe obtained from wild sturgeon species living in the Caspian and Black Seas: Beluga, Osetra (Russian Sturgeon & Persian Sturgeon) and Sevruga, so called the “True Sturgeons”.
Depending on a country’s national laws, the word “caviar” can also be used to describe the roe of other sturgeon species and non-sturgeon fish, such as salmon, steelhead, trout, lumpfish and whitefish.
According to the United Nation’s Food and Agriculture Organization, roe from any fish not belonging to the order of Acipenseriformes are not caviar, but caviar substitutes. This position was also adopted by the Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES), the World Wide Fund for Nature, the United States Customs Service and the Republic of France. However, if the name of the fish is identified, the word “caviar” can be used. For example: “Salmon Caviar”, ‘Bowfin Caviar”, “Lumpfish Caviar”, “Trout Caviar” etc.
Both instances would require a refrigerator at a temperature of 26° to 36° F for fresh caviar. After opening the container, the lid should be put back on to limit air exposure during re-storing.
Yes, you can freeze your caviar to extend the shelf life to about a year. However, the caviar will have less flavor and a softer texture.
Orders for perishable items received by 12:00 PM Eastern Standard Time, Monday through Thursday, are processed and shipped the same-day unless a later ship date is requested.
Yes, every order must have only one delivery address and therefore one shipping charge. There is no way to combine shipments unless they are going to the same address.
Standard overnight shipping is a flat-rate of $35 for delivery on Tuesday through Friday in the continental US. Saturday delivery is $50. Ground shipping is $15.
Contact us and we will send you a return label, if necessary. If product is perishable, re-freeze the gel ice and send it back in the original insulated box. If the product was ordered by customer's mistake then shipping will not be refunded.
