Caviar is the oldest delicacy; it was first mentioned in Greek chronicles dating back to the third century BC. It then reached the tables of noble Byzantine Greeks in 10th century and then reached a large-scale trading between Byzantine Empire and Kievan Rus.
It became popular in China serving it to royalty as well as Ancient Rome. The word “khavyar” has appeared in written records of 13th century.
For quite some time it was considered “poor man’s food” in Russia and was worth pennies and then reached the tables of Tzar’s, from there its evolution took off.
For a long time after caviar was a delicacy consumed by the wealthy. Today, caviar has become more readily available and affordable. You can find an assortment of caviar at reasonable prices. Some types of caviar with name prefixes such as ‘Imperial’ or ‘Royal’ will always be the most expensive and sought out after.
