Daniel Patterson's Chive Flan with Caviar Recipe (Serves 4)
Ingredients
- 1 cup heavy cream
- 2 large eggs
- 2 tbsp finely chopped fresh chives
- Salt and pepper, to taste
- 1 oz Royal Osetra Caviar
- 1 tbsp unsalted butter (for greasing ramekins)
Step-by-Step Process

Prepare the Oven
Preheat your oven to 300°F (150°C). Grease four small ramekins with butter. -
Mix the Flan Base
In a bowl, whisk together heavy cream, eggs, and a pinch of salt and pepper until smooth. Stir in the chopped chives. -
Fill the Ramekins
Pour the mixture evenly into the ramekins. -
Bake the Flan
Place the ramekins in a baking dish. Add hot water to the dish, filling it halfway up the sides of the ramekins to create a water bath. Bake for 35-40 minutes, or until the flan is set but still slightly wobbly in the center. -
Cool and Plate
Remove the ramekins from the water bath and let them cool for a few minutes. Gently run a knife around the edges to loosen the flan and invert it onto a plate. -
Garnish with Caviar
